OK, so is going to be a beautiful day tomorrow in NE TN and I have to get my smoke on!
This is what I'm thinking about....
4 each of Thighs, Drumsticks and Wings sitting in a brine until tomorrow AM.
Thighs will then be marinated in an Italian dressing, garlic salt, poultry seasoning, OJ, cayenne (etc. etc. etc.) bath for 4 hours.
Wings and thighs will be injected with a solution of butter, apple juice, brown sugar, franks hot sauce, poultry seasoning. Solution will be cooked tonight and cooled then warmed up again tomorrow and injected at the same time the thighs are bathing. After injecting I will apply a liberal amount of rub and let sit for the four hours the thighs are bathing.
Then into the MES 30 preheated to 230 degrees and the AMZPS with Apple and Pecan 50/50. All times below approximate of course looking for an IT of 165 - 170 degrees
Thighs for 3 hours, after one hour will put in the wings and legs and one hour after that a mac-n-cheese (with a mixture of white cheddar, yellow cheddar and pepper jack) - and every other cheese I had in the fridge to get to 5 cups (including the 8 OZ of cream cheese)!
Missing anything...oh yeah adult carbonated beverage (Lazy Magnolia Southern Pecan from Kiln MS. and Oatmeal Porter from Highlands Brewery in Asheville, NC

Update: Also made Dutch's Wicket Baked Beans along with the Mac-n-Cheese.
