Thanks in part to all the help I received here from you guys, my first ever attempt at smoking was a complete success! The ribs came out absolutely delicious. Did 3 racks of baby backs. Did a 2-2-1 method, using my homemade BBQ sauce. 2 hours uncovered with mustard and Famous Dave's Rib Rub. 2 hours foil tented with apple cider. 1 hour with my BBQ sauce. I did leave half a rack dry, with no sauce, and they were delicious as well. My family swore they were the best ribs they've ever had. I'm going to try to post pix. Oh, as far as the chips go, I used apple chips, and also apple cider in the water tray. I did 3 batches of chips in the first 2 hours, and 1 last batch in the final hour. Next time I may cut back 1 batch, just to see the difference. Thanks again everyone for all of the tips!
