Pig Shots!

Joined the Pig Shot revolution this past weekend. These were knock out good. If you haven't tried them I suggest giving them a "shot" (pardon the pun :)

Have a ton of project I'm trying to get knocked out but I'm just not as efficient as I used to be. Slid these little goodies in to smoke while I trimmed some big ole oak trees.

We used Brookshire's hickory sausage
Brookshire's thick cut bacon
for a dozen - 4 oz cream cheese
shredded mild cheddar
1 diced jalapeno de-seeded
(mixed and stuffed into the shot)
light dusting of Blues Hog original rub
into the Yoder 640 with a mix of LJ 100% Cherry & 100% Hickory pellets
Set on 250°
Into the Yoder with some boneless beef short ribs marinaded with Stubbs Beef Marinate

3 hours in - pulled the shots and move the BBR to a pan & covered for a couple of hours of braising

These were awesome - you're only limited by your imagination as far as shot ingredients but this combo works well.
Money shot!

Beef rib's tasted good but turns out dry - might just braise them all the way if I cook em again.
Great weather here in N Tx - back to the project list (it's quite a list!)

Looks good, I've made them a couple times. They're kind of a pain to make ... tedious, I guess. But boy are they good. 👍

Those look perfect ! Love the cream cheese in them , and if you haven't smoked the whole block of cream cheese give it a go . Good stuff .

Try this next time...
Set 5 or 6 shots aside and mix (50/50) of your favorite rub and brown sugar (dark) together... Then fill the shot with that mixture and smoke right along side the cream cheese filled ones...

You'll thank me later ...

The more you make the more you can adjust the 50/50 mix to your liking... 50/50 is just a starting point ...

Thanks! I have several people in family that don't like cream cheese. So always looking for other fillers.
 
Pig shots the bomb. Got a friend begging for another round.
They reheat nicely too. Just keep the heat moderate.
I normally use my own sausage, but if using store bought my favorite is Uncle John's out of Tampa FL. They go much faster with 2 people and using a piping bag to fill the cavity.
Sorry not a short ribs fan.
Awesome. I've been using Costco bacon, but based on these pictures, I'm switching to thick cut.

You're getting the wrong Costco bacon. I don't remember what it is called, but the 3# packs of bacon are a nice thick cut and make great pig shots. Also my favorite store bought bacon.

chopsaw chopsaw yes sir! I have many in our circle who love smoked cream cheese. I suspect they will like pig shots as well.

Appreciate all the ideas and suggestions. I bet these would be a hit at our annual Christmas party.
