A family member is going to give me a picnic, do not know if it is fresh or not probably not since it is frozen. My questions are can I make a ham out of this and will it be done in time for christmas.  I would to cold smoke or is this possible, I have been search and what is the process. Do I brine it, dry rub or inject it need help

Mike, morning....  Pops has a tutorial on injecting and brining hams.... Injection of the bones is very important for a complete cure....  Time is dependent on thickness of the meat....  I will try to find it....  It should be in articles or wiki's....  Dave

When smoking, it is important to bring the internal temp (IT) to 145 and hold it there for a bit to insure all bad stuff is killed....
