I have access to a couple of pheasants and am wondering how they might turn out smoked. Anyone have any suggestions?

I'd treat them like I would chickens; brine them overnight, rinse and pat dry, rub all over with EVOO and a rub. Smoke them at 250-275 until done.

Can treat any bird pretty much the same I'm thinking, except with wild duck/ goose etc. Brine it first, then I like to wrap a few pieces of bacon around those things for added moisture during a smoke.

But, never have done a pheasant before. Love to try though.
