Pepperoncini brined chicken breast

Finally got around to this. Pickle brining chicken has been around a long time. I wondered how the brine from pickled peppers would taste, bieng a lover of spicy food it couldn't be terrible...right? It wasn't, but the pepperoncni flavor wasn't present either.

I pounded a 12oz boneless breast to make it more uniform, but not really flattened. Put in a bag with some brine and let it go 2-1/2 hours in the fridge, turning a few times. My notes tell me to not brine more than 3 hours, but it could have probably gone longer to get the flavor in there better.

I didn't get the coveted grill marks for some reason but I have learned how to grill boneless breasts and keep them moist and tender.

Plated with some of my BBQ sauce and broccoli with easy peasy microwave hollandaise. Chicken was fork tender and tasty.

Fairly Keto meal. My rub and my BBQ sauce are both sugar free and I still make them that way even though we are "off the LC wagon"...and the belly shows it...I've been sprinkling in some low carb meals to try to balance the other carbs we are eating!

What I notice most from pickle brined chicken is the hint of dill and garlic infusion. I don't get the cucumber flavor. I don't do it only purchased so not sure how long they pickle it.
I brine chicken or brine and cure so they sit in the bag for a number of days.

Looks great. Did the flavor of the brine come through in the finished chicken?
Not as much as I expected, but definitely not any bad effect.

I started brining chicken a few years ago and with careful grilling, no more dry chicken breast! My notes from searching the web says to not brine any more than three hours, but I think I will try twice that next time just to see.
