Im having a brain fart, I can’t remeber when to add the pepper? I have the bellies soaking in water, then into the fridge over nite for the pellicle to form, do I put the pepper on tonite or before it goes in smoker? Thanks...
 
I'm no expert, but after the soak, I pat dry the surface and put the pepper on. Then in the fridge.
 
Thanks , that’s what I did, looks like it came out pretty good , have not tried it yet
 
Pretty sad when I just searched for putting pepper on, and my own post from a year ago pops up!
