Nice. I have some goose breasts curing now for some goose pastrami. How did you serve it?

I made a pan sauce with some demiglace, shallots, garlic, butter, ramen stock and cream, along with roasted fingerling potatoes. Two nights later (last night) sautéed a bunch of mushrooms with it and made a sandwich on garlic toast.

The "why not" approach has never failed me.
It's a good life philosophy.

Hate to waste BTUs and space in the smoker!
It's not as bad with the pellet smoker, but I *hate* firing up my BGE for something done in 4 minutes...
