Pastrami - how long to soak corned beef?

Hi all,

Unfortunately - I thought i had notes form my first attempt but I dont... SO

My first Pastrami was good but still salty. I think I soaked about 12 hours only because the saved recipe has 12 hours...
Couple questions;

• How long have you soaked your store bought corned beef brisket flats to remove salt? I am shooting for not very salty...
• Was it enough? Can you over soak? seems unlikely to me but worth asking.

Unless you change out the water a few times you are just soaking the corned beef in salt water. You didn't say whether you did that.

Ah yes a couple water changes were done. I soaked 22 hours with three or four water changes

Allot of it depends on the brand-name. Some brands seem saltier then others. I usually go at least overnight changing the water 3 to 4 times.

I settled on about 22 hours with 3-4 water changes. I took notes this time which I almost never do so if it turns out good I can repeat it. I made a new rub and they are smokin. thanks!

My local supermarket (Meijer's) offers "low sodium" corned beef flats as well as normal ones. You might be able to find something similar.
