This was on sale my last trip to the big smoke up so I picked a package or the Original Wild West Pepperoni Seasonings.

I'm not going to do a full description of the smoke because they were kind of disappointing. Don't get me wrong, they made a decent pepperoni but the flavour was mostly just hot. There wasn't a lot of complexity. I didn't note many notes of fennel or cracked pepper. It will be fine on pizzas but if you are looking for a good pepperoni and cure mix, I suggest you try something else.

Disco . I made some of the Wild West Pepperoni also..This was made into short lengths then a bamboo skewer stick inserted thru them...after smoke and 3 days drying they are ready for using in Ceasar Drinks.   ( i wanted to try these premix so i knew how they tasted...im in the meat industry and this is easier to send people to buy this instead of trying to give them my recipe that are all in grams..) I agree not like my home made but good enough for deer hunters that might make 1 batch a year.

  Made  their Summer sausage today. Not bad . Have also tried the fresh mild italian .. An easy solution for the deer sausage makers.

It is ok, it just wasn't great. I am sure there has to be better mixes out there.
