I started yesterday making my own poolish. Today I used it to make a batch of dough, half of it I will freeze for later.

I went to fire up the Ooni. I was starting a small amount of charcoal in the chimney and noticed I was out of Hickory chips. I used Mesquite instead. It did not burn near as hot as Hickory so they were taking a while to cook.

The dough was nice and airy.

For the last one I switched to Cherry chips so it would run a little hotter..


It did...

Ouch on that last on Chris, but the other two look really good.

I'm with Chris...Oops on that last one....But the back side still looks pretty good. Now those other two.....They'd be gone with a quickness.

They look great. I'd eat the last one, a little char never hurt anyone.
P.S. I like your cutting board. First time I have seen end grain in one.

The first one was good, the second was great and the third.....

Well 1/3 of the third was edible. Next time I will have Hickory chips available.
