We just devoured our first smoked chicken! We've never smoked before. I'm beyond impressed! It's probably the best chicken I've ever had! Here's what I did:
I brined over night in 1 gallon of water, 1 cup kosher salt, 1/2 cup of brown sugar, 1TBS whole peppercorns and 1TBS minced garlic.
When I woke up I pulled the bird out, rinsed her, spatchcocked it and put it on a drying rack in the fridge for a few hours.
After that I mixed up some butter and POG and made slits under the skin and rubbed it inside as well as all over. Threw it in our new MES30 at 275 for about 3 hours with a mix of hickory and apple wood. It was delish! Definitely a hit with my picky 3 year old! Thanks for all the help and advice!
