ODE to Cherry Dr. Pepper Pulled Pork - First time

Hey everyone

Wanted to post my thoughts on my first time every smoking anything.

Jeff thanks again for the Newsletter, because that is where I saw your Recipe for the Cherry Dr Pepper Pulled Pork.  I followed most of it to the letter, injected Dr Pepper Cherry like you said.  Put a nice rub on it, and it looked almost like your picture.  (Sorry I used a different rub).  Off to my UDS smoker for the first time.

I started at 12:30 PM CST and it almost cooked right like you posted.  I was fighting the UDS and could not hardly get it to maintain 225-230 degrees up and down 200 - 250 - 300 - 325 (opened the lid to cool it off, Note that does not work)  Finally closed it all the way down got the temp to 225-230 finally.  Aluminum pan, more Cherry Dr Pepper and foil about 5ish internal temp was right at 160.  It is 6:15 pm and it was at 175 in the pan and foiled when I started typing this.

So excited to try it isnt funny.  My son helped me move the meat to the pan.  When he was walking in the house he turned and looked am me and said " Dang Dad," I looked up at him and said "what???"  he replied back to me " WOW that really smells awesome and I cant wait to taste it!!"

I had a tear in my eye !!! :-)

Thanks again for the recipe and if anyone has any advice on what I am doing wrong on my UDS smoker, please do not hesitate to contact me e-mail post here, something, I know I had to have done something wrong.  The neighbor is a BBQ competitor and he built the smoker for me.  Luckily he was home this weekend and gave me a few pointers.

2 September 12 Update:

Well I can say my first smoke attempt was a success.  The bone pulled out clean and minus the one "harder" section in the middle, it was moist, juicy and not overly smokey.  Got compliments from all the family, so I am pleased.

I welcome any and all comments, suggestions and/or instructions.
