Ok, so I went to my (Kane county, Il.) fair Sat. as I usually do every year to watch the rodeo. Well this year I was surprised at what I found, a rollin, smokin, log cabin. I was shocked and just had to check this stuff out. So I went up to the window and ordered a pulled pork samich and told the guy (Ken) at the window I wanted to see if it was as good as mine and started laughing and joking with him. I went and ate the pulled pork and it was great so I went back. I walked up to the window and asked to try out the chopped beef brisk samich and he said aren't you full and I repied nope, gotta try that too. It was every bit as good as the pulled pork. Then I got to meet Pat (the owner) and we talked about smokin and joked around for awhile. I told him about my pastrami and said I would bring some over for them to try on Sunday if I could make it back.
Well I got done workin and headed over to the fair with the pastrami in a cooler. I found Pat and said here ya go as I handed him a small bag of the pastrmi I smoked the other day. He tasted it and said it was great and asked me how I did it. To me, that was a great compliment! So I told him how I did it and he said he would like to try that sometime, maybe for the business? Then he told me to order whatever I wanted (no charge) and I got the beef ribs, another pulled pork samich, fresh cut fries and a pepsi.
Let me tell you, the ribs were fantastic. Good bark, great flavor and fall clean of the bone tender. Pat and his partner Ken were a couple of great people and a joy to joke with and talk about smokin. I told them about what a great forum this was, how helpful people were and invited them to join our family of smokers. I hope they take me up on the offer as I think they could offer alot to some of the people here on smoking for larger parties and such. All in all it was really a great weekend and the rodeo was a lot of fun to watch too.

If you would like to visit their site here is the link, they got some pics of their smoker and cabin set up: http://pmaconcessions.com/index.html

Thanks and I hope you enjoyed the read.

Neat looking outfit, might be hard to pull if those logs are real. Dang I wish they had taken a pic of inside the smoker .

I guess the guy must of run into some mosquitos one time, screened back porch is a nice touch.

Hope they join SMF its always nice to have the pro's on here. Good on ya for asking them.

Now thats a cool rig. GnuBee I think the screened in smoker area is probably health dept required I have read it is in some areas

Very cool. That's a great compliment when you hear that from someone who does it for a living.

Awesome looking rig. And reading that they also have another refridgerator trailor and an RV, I guess there must be some money in this.
