Sounds like you hit the stall a bit early but hopefully you are past it now. It kind of drives you crazy at first going thru stalls. My mind would mess with me like is it still cooking or did my thermometer break ???!!!

I still have PTSD when my therm really did break and didn't change temp for hours. I ruined a brisket flat that day =(

My smoke was an epic fail. Wasn't too awfully tough, but drier than that proverbial popcorn fart. I don't know what the au jus tastes like, it's still cooling.

I guess that I shouldn't have rested it in a warm oven.
 
Hate that. Yea what was the IT when you pulled it and how long did you let it rest in the oven? Au jus might just save the day
 
Not sure what internal temp was. It was in the oven 2 hours, after which I gave it 20 minutes to cool then shredded.
