HI All!

Name is Jeff from Grand Rapids MI. Just bought my first real (ish) smoker. I have cooked a few times on one of those Weber red torpedo looking things. Results varied and the constant fire maintenance in that tiny pan was a pain. Anyhow I just picked up a Masterbuilt Pro Duel Fuel from HD. I had a few questions answered by looking around. I have been seasoning the smoker today and already ran into the issue of wood chips catching fire due to the poor design of the chip pan on this model. On a second season I wrapped the chips in foil and poked some holes in it and that seemed to work better. Might change over to a cast iron smoker box or cast iron pan. There sure didn't seem to be much smoke when I got the temp around 250 with just chips and propane.....

I saw a ref to a e-course on this forum but have not been able to find it. Any help? Also any suggestions for a noob would be appreciated. Think I am gonna throw a chicken on there tonight and see how she goes. Thanks in advance for any help.
