I entered the competition but my application was not chosen.. but I still spent 5 hours in the pits talking q
With some of the 64 teams.. the nicest girls and guys you can every meet..
I also had an one hour class with Jack McDavid pitmaster and owner of the FireHouse Grill
He was very informative and funny .. he came in dragging a lit Weber kettle with a Broken leg to demonstrate how a rub applied 15 mins before grilling
To a chicken breast changes it's texture..
Anyhow. He is old school. This is his rub for everything. 9 parts. 4 parts Salt 1 part pepper and 4 parts brown sugar..I said sugar on Brisket? He said
Who doesn't like candy?
Maybe I will try it? Maybe not
 
Gotta love old school! "Just put some salt and pepper on it and throw that (expletive) on the smoker till it's done." That's the advice I was given for my first smoke. Reality is, people have been eating and loving BBQ since long before injections, digital probes, this rub or that rub, etc.....
 
Ya know I'm a professional photographer for 40 yrs and I have learn one thing KISS keep it simple stupid..
Same goes true for BarB Q. Less is more!
