Ok, 2 batches of wings. Using the “Air Crisper” function and basket.

Broke down full wings into sections, salt and pepper dry brine in fridge for about 8 hours.
First was maybe 10 sections in the crisper basket, LJ char hickory pellets, 400*, 30 min … way over done again. This thing cooks sooo much faster than to what I am accustomed. But good flavor.
Second batch, more heavily loaded, 400* again, only 20 min, no pellets … these would be perfect for saucing … nicely golden and crispy.

Another takeaway… the pellet pocket burns out in about an hour. Be prepared to pull out with needle-nose pliers to dump ash and refill hourly. No big deal.
