Hello forum.  I love BBQ and finally decided to take the plunge and try it myself.  I just bought the smokin-it #1 and I'm looking forward to learning from all of you.  My wife wants a whole chicken for the first smoke, so I'm trying to figure out how to prepare it.  I live in Mesa AZ.  Thanks for this great forum.

Hi Gary,

I'm new here as well....but I can tell you that a brine is almost a must for poultry.  Plenty of salt, some apple juice (or other fruit juice), some aromatics, maybe some chicken stock, or water.  Brine for 1-2 days, then smoke.  I'm sure there are some help pages on here for it.  I do this with turkeys for Thanksgiving (roasted, not smoked), and I've converted my fair share of non-believers over the years.  Good luck!
