Im.about to finish my 1 smoker kind of grill smoker but anyway have any of you use something like that this i mean you using chunk of wood or big one even to start sgould i start from lets say cherry wood or start with hickory or something then switch to fruit one??i dont wanna waste to much :)any suggestion helps thanks

Personally I use whatever wood I want the flavor of the entire cook from the time I fire up the smoker to the time I take everything off of it
 
I think you'll be fine if you switch woods, basically towards the end of the smoke your meat isn't going to on to much more smoke anyway. (my opinion)
