Hi Guys,
Im a restaurant owner from Ireland and have an american style restaurant called Buffalo19.
We are really far behind when it comes to good american style BBQs, wings, burgers ect. You guys just have it down. Its incredible what you can do with meat and I would love to bring that passion back here to Dublin.
I am currently doing Handmade Burgers, wings, steak sandwiches but really want to expand into pulled pork, smokers ect and show the Irish how meat should really be done.
I am a complete newb so please be gentle.
I want to start with Pulled pork, we are a small resaurant and hope to do between 40-70 1/4-1/2lb sandwiches a day.
I was looking for advice on equipment, cooking methods, rub recipes. Got a great one from JJ on one forum which sounds just incredible and am now looking to step back and find the best piece of equipment to put it in. I dont think I could afford more the $2000-2500 as I said before we are a small shop.
