New guy Jonesie reporting in from Southern Maryland but learned to smoke in East Tennessee. Been smoking about fifteen years and still use a well-cared-for New Braunfels. Usually hickory or pecan but playing with crab-apple this year due to the hurricane a year back. Brine, rub, smoke and eat is the method; generally three days but I am so open to learning more. Howdy all!
