Hello everyone!

I'm from Pennsylvania and recently bought a Masterbilt smoker. Tried to smoke cheese for the first time recently.... No too bad. Looking to expand my knowledge on smoking

How long did you let the cheese rest before you tried it?
 
I let it rest about 2 days... Melted the previous 2 pieces before I figured out that I had to keep the temp very low. Very challenging to keep the temp low in my Masterbilt because of the rotary dial.... Thanks
 
Yea you should let cheese rest at least 2 weeks. It can have a very strong and/or bitter taste right at first. The longer it sits the more it will mellow out and the better it will taste.
