I stumbled onto the site searching for info on smoking chicken.

I'm new to here but not to smoking bbq.
I use a BGE and an electric smoker, depends on the mood.

When i'm out and find good bbq I make a point of asking for info from the cooks.
What wood they use, temps, seasonings, etc..
One restaurant gave me a tour then said they should charge folks.
So maybe I started a trend..
I like to know what wood the professionals use to match with their meat.

Also when the smoker is going, i'll usually be drinking my home brew.
Right now my home brew is an Mexican agave, but I'm getting low.
I think its time to make a porter for fall.
