I am fairly new to smoking and I am willing to smoke anything edible. I currenty use an electric smoker, but will be building my own in the next year or so. I have a great advantage for building my own. I am the shop foreman for a sheet metal fabrication shop and have access to welders, plasma table, 1/4" plate shear and a hydraulic press brake capable of bending 5/16" plate.

Welcome to the site.  Sounds like a nice shop you are overseeing.

Post up pictures of your smoker build when you get it going.
