Did a NYD double smoked ham today and boy was it great. I seasoned it up with Heath Riles Cherry Rub and tossed it on the PBC until 120F. Then I threw on a cranberry glaze and let it roll until 135F. Served it up with mashed sweet potatoes with scallions and garlic and roasted green beans.
I’ve done ham in many ways. Nothing comes close to the results I get with the PBC. Just killer.....
