Family recently purchased a new thermometer for me and I got it over the weekend. A ThermoWorks TW8060 kit, includes the meter with a smokehouse probe and meat probe. I'm excited to try it out soon.

Most of my cooks have taken longer than expected and never really turned out as expected. The flavor was good, the meat was cooked but butts didn't pull and the BB ribs didn't pull back from the bone like they should. I tried some cheap thermometers and didn't really want to buy the Maverick due to the probe issues and knew there had to be something better. Thanks to the folks here, I hope I have it.

Set up the crocodile clip probe in the smoker late yesterday, cranked up the heat and watched. The meter instantly started to climb. I stuck in a long stem thermometer that I had been using only to see it kind of stabilize at around the same temperature as my new one. Not what I wanted to see, so I left for ~20 minutes. Came back and the stem thermometer read almost 50 degrees higher

than the Thermoworks meter. I've now confirmed the reason why all my cooks took longer than expected. 

Definitely looking forward to some cooking now that I'll have confident in my chamber temperature. Now, all I need to decide is what to try next?  Decisions, decisions.
