New to this site

Hello from up here in central Canada SK the land of the living sky (mosquitos). My name is Dan and the handle Helgi don't ask how I got that but playing fastball will do that to you.I have been pickling mostly fish and would like to try something other then fins. I have a DBS with the cold smoke attachment the finned 900 watt element and waiting for my fan kit I will control the smoker with an Auber PID dual probe. Will be lurking at the site for a while till I get my feet wet should not be to hard since we are moving to the west coast. But if there is something that I might know a little about I will jump in.
