New to Smoking

Hey everyone,

I'm Aaron.  I just recently came across this forum and just got interested in smoking my own meat.  However, I have always been a fan of eating the food that comes out of a smoker!

I am in the Midwest (Nebraska) and I built my own smoker out of a 30 gallon metal trashcan after looking at a post on a DIY website but I am having trouble getting it to the right temperature.

My plans are to smoke ribs, chicken, brisket, etc. 

I look forward to learning about smoking with all of the resources on this website.

Aaron-Welcome to SMF- you may want to give a re-think on that trashcan smoker especially if it is galvanized High heat can cause the zinc to burn off and it is toxic . Take a look at our UDS (Ugly Drum Smokers) build forum. They are fairly inexpensive to build and you are able to maintain better control over your temps.

Folks here that have them love the way they cook.

Dutch, does it matter any that I burnt off all the zinc?
