New to me ole slicer

After burning up my cheesy little used slicer I decided it was time to find a good deal on a used slicer that would hold up for a while. I set out for two which I had selected, a Globe and a Berkel. The lady that had the berkel wouldn't budge an inch on the price at $475 but with good reason. It was relatively new and clean as a whistle.

Now the Globe, a little older but still a very nice HEAVY slicer and at a much easier to live with price. It has a built in sharpener and I checked it over real well, good blade, good motor and everything seems to adjust really easily. It slides slicker than snot and with little cleaning we'll be shavin that roast beef betterna butcher.

Well, with using comes cleaning, but how else will I get that paper thin sliced. My conscience wont let me go back to the butcher for the slicing. The poor girl that slices my meat gets a horror stricken look on her face when I walk in now.
 
What a great find, Dan! I keep on the lookout for one like that, but I am running out of places to store goodies.

When you get it up and running and dialed in, whip out a few paper-thin slices. Carry them back to your meat slicing gal, and tell here that they are too thin - can she get them about half that thick? LOL

Steak Carpaccio is on my menu once I get a good slicer...

Great find! You're gonna love it! That blade will slice super for many years, just don't slice YOU!
 
Yeah, I removed the blade and cleaned it up real nice, scrubbed into some of the corners with an old toothbrush even, disinfected everything real well and put it all back together. Next I flipped it over and cleaned the runners and oiled them with a thin coat of silicone lubricant. everything adjusts and slides like new now. I engaged the sharpener lightly and brought a super sharp edge to the blade. Thats slick!

OK, lets make some roast beef & pastrami...

thats the way to go there!
you will love that thing, and if you make jerky you will find that being able to slice up your jerky meat on there cuts the batch time way down from hand filleting it.
here's a picuture of mine that I picked up at an auction when a grocery store in my area closed.
think I gave 325.00 for it and it even has an automatic setting were ya flip the lever and it slices on its own while you watch
