Have you tried cooking on it stock? I understand that temp swings can be unnerving because I felt the same way at one point. Then I was doing a large cook at someone else's house and had to throw a wrapped pork butt in a kitchen oven to finish. I left the probe in the butt until it was done and when I removed the butt the probe stayed in the oven. I watched the temp swing back and forth between what the oven was set at by 25 degrees each way. I stopped worrying so much about temp swings after that.
 
I have done several cooks. The temp swing does not bother me. Everything has come out great. I have posted most of the cooks if you do a search you can see them. Just make sure you have plenty of water in your pan. It help stabilize the temps. The smoker does run hotter in the back. So I just turn the greates half way through.

I tried to use it for the first time yesterday. I had it set at 275 and it worked fine for about 5 hours and then it had allot of smoke and then I heard the fire roar and got the erh code. As the fire was roaring and the temp was climbing I could hear the auger as more pellets to it. I think with a PID controller it looks at the temp and only adds pellets when needed. Please correct me if I am wrong.
 
From my understanding that is correct. The analog controllers run on time. In two and a half months I have done 8 cooks with zero issues. Sounds like you may have a bad controller or temp probe.
