Hello all, I am fairly new to the smoking world. My dad has smoked for years on a large trailer style firebox horizontal smoker and now I have recently decided to start smoking rather than just grilling.

I just purchased my first smoker this week after researching this great forum. I went electric with the MES 40 new generation (20075012).

I have yet to purchase the AMNPS but, have plans to soon since everyone speaks highly of it.

Very excited to try this new MES 40 out this weekend. Great to find such a useful forum such as this one.

You are well equipped and seem to be headed in the right direction. If I were you I would want to make use of your dad's experience.

Buy a couple racks of ribs and a few pounds of sausage ( for snacks while the ribs cook). Invite dad over for dinner and the both of you can have at your new toys.
