Hello eveyone. My name is Greg and I'm 25 years old. I've been cooking for as long as I could remember (my mom made me learn how to cook because she thought I was going to be single for the rest of my life...but I proved her wrong). I've been grilling for close to 8 years now. I own an early model Weber Performer charcoal grill, a brand new Siearra Charcoal grill from William Sonoma (my wife works there...got to love the discount), and just bought a GOSM 3405gw this last weekend.

I've been perfecting my art of grilling for awhile now and decided it was time to step-up and become a big boy.

I've never smoked anything before, and I'm getting baptized by fire (no pun intened) into the world of smoking by smoking my first briskets for our housewarming party this weekend for close to 80 people (I've already posted in the forum for help then found out I was suppose to start here). It's sink or swim...or go hungry or eat. However you want to look at it.

I've already been soaking up as much info from the forums as possible. I'll try to post some pics too when the baptism is over.

Greg

Welcome to SMF, good to have you here. Sounds like you have a full plate for this weekend. The friendly folks here will help all they can. As said on your other post pork butts are more forgiving than briskets, but if you are set on doing brisket the SmokyOkie's way is great and from the list on equipment you posted it shouldn't be a problem to do. Good luck with your cook and keep us posted on it outcome.

Welcome Greg -

I'll say a little prayer for you ....
