It was time to stop lurking so Hi Everyone! I started smoking on an ECB in the mid 80s. I use a WSM now but still keep the ECB around as a charcoal starter stand and backup if I need a little more grate area. I started smoking at just above sea level and have adapted to 6,700+ feet. I do mostly pork but my turkey is probably what more folks have tried. I don't think you can ever cease learning new things about this delicious, addictive craft. Glad to be here!
