I have been smoking just a short while. I have a gas masterbuilt double wide smoker. I smoked a turkey last year with Jeffs recipe and all went well. This year I tried smoking 2 and after an hour went to add a few chips of wood. When I opened the smoker I found the turkey had turned black after only one hour. I will try to post a picture. Will the meat still be good?

How much wood did you have in there to start? What did the smoke look like coming out the vent? I don't see how it could have burned in just an hour so it sounds like too much smoke and it got covered in creosote. If that's the case probably not going to taste too good.

Sorry to hear about that problem.

I suggest you start a thread to get visibility on that problem.

Many will ask questions to understand what could have caused it and whether the bird is eatable or not such as what wood type/amount did you use to smoke with and was it cured or green wood.

So I would suggest you include all the details to speed up the process of getting the answers you seek to such questions as...

Using water in the water pan?

Using a drip pan for the bird?

Was there a grease fire in the bottom of the smoker?

For what it's worth, gas soot caused by a clogged burner will also foul up things as well. Is the flame yellow?
