I've been a deer hunter for many years. I just paid $100 to have a deer I'd quartered up deboned and ground. Way too much money since I've done most of the work. So we are buying a .75 LEM grinder and looking at getting an electric smoker. I spent the last few days going thru 23 pages of very informative threads. Man you guys make some yummy sausages!!!

New Athens is about 30 miles SE of St. Louis.
Anout 100 miles south of Springfield.
My dad lives in Pawnee right off of Sangchris lake.
We will be up there Christmas day.
