Greetings from the Great White North. My bride supplied me with an Apollo 3 in 1 Smoker as a rockin birthday gift recently so I'm just getting ready to embark on this smoke game.

Any tips or links on how to manage the fire in cold and windy weather would be appreciated. I've been advised that I'm to smoke a bird for her family at Xmas...gives me a little better than a month to experiment. We reside a little over an hour north of Toronto and wind is reality here.

I have a Napoloeon gas grill that has produced some outstanding feasts over the years, no question that I'm stoked to start the smoke journey.

There you have it. Thanks for the tips I've already accessed, gonna do smoke #1 with ribs tomorrow.
