  Hello everyone,

  We live midway between Phoenix and Tucson, and am retired. I had always wanted a smoker for ribs and found a New Braunfels (now Char Broil Silver smoker) at a garage sale for $40.00, took it all apart, wire brushed all the metal, repainted it and then seasoned the inside. Have used it for ribs twice and am very happy with it.

  I do have a question. I really like using charcoa and have a Weber Peformer. So far I have only used charcoal and wood chips. With the charcoal I have to monitor the temp closely and have to replace about every hour or so. Have seen videos where the person used a large piece of wood and it burnt for hours. I am really looking into extending the cooking time any suggestions?

Finys , you are in 'prime' Mesquite  country , and have the room (I guess ) to set-up a side fire. Use the embers from that to fuel the smoker , steady temps. and cheaper too .

And the exercise finding it is good too.
