So I decided to upgrade my sausage making equipment ... I have a small, entry level Cabella's meat grinder, and a manuel LEM 5 pound stuffer. And a generic mixing tub with a manuel handle.

I was making sausage in 20-30 pound batches, and was getting discouraged at the length of time it was taking.

I decided to upgrade. I bought a Cabella's 1HP grinder wit h #22 plate, and their 7 gallon mixing tub that attaches to said grinder. I also ordered (and have yet to receive) a LEM 20 pound motorized vertical stuffer.

I'm also in the market for a vertical electric smoker. I'm trying to make a dicision, and need help. LEM has their "Big Bite" electric smoker ... and of course there is Masterbuilt. Any guidance you all have would be great on that front....

Man that's some nice equipment, wont be a cat safe for miles lol . I got a hand crank mixer a few years ago and it sure beats the hand mixing, It don't take long to tie up a pile quickly, having a good place to store stuff is the hard part now. cant wait to see it in action
 
BC510, Looks like you are getting serious! I can't help you with the smoker but I'm jealous of your motorized stuffer ! :)
 
That's the exact setup I've been using for years now, you won't be disappointed in your investment. I do everything by myself and with the foot pedal, including the stuffer. If you're going to be smoking your sausage you want to get one that doesn't have those huge temp swings that will result in a fat-out and ruin your effort. That's how I ended up with the electric smoker I have, no regrets, but costs quite a chunk of change these days. TSM turns out some fine units that should do a nice job and last you quite some time. I understand they are great folks to do business with, you might want to check them out, takes a little time on a waiting list. RAY

Hmmm, I don't think I ever saw a 7 gallon mixer.
The smallest I can remember seeing was 11 Gallon. Bear

Somebody makes then for Cabelas Bear. They hookup to their commercial grinders, no hand-cranking involved, saves the shoulders, I'd be done without one. RAY

Thanks for the recommendation sawhorseray sawhorseray . I was looking at their smokers - for me the cost is an investment, and I don't mind paying a higher price point if I'll get better performance. That said, TSM doesn't mention if their smoker is insulated. Is this the smoker you have?

No bacon_crazy510 bacon_crazy510 . My smoker was made for Cabelas by PS Seasonings. They used to sell for $1499, I bought the model off the floor of the Cabelas store in Boomtown 12-13 years ago for $1199 on the way home from a winning trip to Reno. Cabelas hasn't carried my Pro 100 for maybe 8-9 years now but you can get the exact same thing factory direct from PS Seasonings, the PK-100. It's a commercial-grade quality unit built in Wisconsin, never a single glitch, I baby it. RAY
