Well I've been lurking here for a few years off and on. I just got motivated and built some stuff after getting motivated to turn some deer into summer sausage for the first time. I built my smoker from a proofing cabinet, and I currently use charcoal and wood. I made a meat cannon and bought some casings. My 6 year old helped me stuff about 20 lbs and e smoked them for about 6 hrs. I wish I would have started making summer sausage 10 years ago when I started smoking meat. Wow, what fun. Does anybody have a decent venison snack stick recipe they like?

S79, Nice smoker, stuffer and VSS! You can check the search box above for all kinds of tips/recipes for summer sausage that have been posted by the members here.
 
Thanks for the recipes and compliments. I've got to get that smoker wrapped in pole barn steel soon. I'll post pics when it's done.
