Was going to do a whole hog over the weekend for a graduation party, was looking for a good rub recipe and injection recipe, any info would be helpful.
I chop onions, jalepeno, and garlic and mix with worcestershire. I then stuff it in the meat all over like you would do a roast. Then I just hit the outside with some tony's chacheres and put on a rotisserie by an open fire
I would suggest buying Jeff's rub and sauce recipe well worth the money. Then I would mix some of the rub with apple juice for the injection. For the rub on the pig Jeff's is great
