Most any fruit makes a delightfully sweet little Palate cleanser and doesn't set as heavy as a big ole piece of Cake and Ice cream .
Peaches Bourbon- Fresh peaches with butter , Brown sugar and a dash of Bourbon , place on a grill long enough to melt the Butter and make Marks on the Peach...no Alcohol??? use Cinnamon.
Apples , Pears and Bananas are good this way also...make a bit of Pecan sauce -pecans , Brown sugar , Cinnamon and Butter melt and add chopped Pecans and pour over the fruit when served , no Ice Cream needed...
I'm thinking of making the "mini-fatties" that Jrod62 posted in the September throw down thread for our next office party (the unofficial smoker competition). I could smoke the fatty ahead of time and then wrap and deep fry them in the won ton wrapper for the party in the office kitchen (commercial kitchen).
I'm doing Jalapeno poppers. I core the Jalapeno and using a pastry bag I fill the Jalapenos with cream cheese and crispy bacon bits ( not the fake stuff) then smoke with hickory wood for about 45 minutes. I made my own holder for the Jalapenos to keep them vertical. You can fashion one out of a disposable aluminum pan for about a buck.
Not sure if you guys have had Filipino cooking they make a Lumpia sort of like a pork egg roll. So here is the idea mix up some their pork mixture garlic, miniced onions, minced carrots, minced green onions, salt and pepper. Turn that into your meat wrap. Then fill with chinese veggies cabbage, water chestnuts,celery. I don't think I would add a cheese unless it is required (still new to fattie culture but trying to bend the curve) Smoke them with a hickory/cherry wood to keep the sweetness then do the egg roll wrap and use a sweet and sour dipping sauce or a plum sauce. Not sure when this is gonna happen but it will happen.
Atomic poppers are big favorite here few tips I found easiest thing to core them with is a peeler
so found sliping a toothpick thru the middle of them made it easier to move them around so you are not grabbing the meat of the popper and causing the cheese to leak out. I take cream cheese in a bowl keep it cool, mix in my favorite rub and some shredded jack cheese then cook them like midnight bulls said above. I have wrapped them with bacon as well.
