Well, my first run of jerky worked OK, using Kutas' recipe, in a dehydrator.

now, I have a request for a similar jerky but LO SALT.

I use "Cure#1"

I am thinking I can just remove the salt, rely on the soya and worcestershire, and soak for 72 hours.

but I'd appreciate any proven recipes.
 
If you need to, lots of co.'s make lower sodium soy sauce. Lea & Perrin's also makes lower Sodium worcestershire sauce.
Here is a chart that shows how much sodium is in salt so you can work backwards to see how much salt is in your recipe.
