Hello. I am getting ready to open my second bbq joint and need to find an indoor smoker to be used under my class1 hood system. I live north of Seattle about 30 miles. Currently have 2 6ft rotisserie stick burners and a Lang 84. My first choice would be an oyler lil red smokehouse. I also am interested in finding an ole hickory cto or the like. I prefer to use wood. Lump plus wood chunks is my second choice. Can anyone help. Looking forward to being part of the group.
