The neighbor dropped off a couple wild duck last night they are skinned and clean, I would like to smoke them just wondering if I need to put bacon on the bird to keep it moist???, Any and all help would be useful. Also what would be a good brine.
Bacon would work nicely. One thing to remember is that almost everyone over cooks wild game. As for brine a basic salt, sugar and water then add anything you like. Herbs are always good.
