Need advise for my wedding

so I bought a whole cow last august: I still have the brisket, and plenty of roasts.

We will have about 80 people there, and I thought this would be a perfect time to cook the brisket. Not sure how many pounds I have. And I read on this site about 8oz per person. So if I do not have enough brisket, can I slow cook and of the roast cuts for BBQ as well? This is my first cow, and I have never really cooked bbq much. Mainly just bbq chicken and steak. I am not sure what cuts are good for bbq. And for some BS reason the ahole processing center cut all the ribs up and put them into soup bones. Frustrating.




I guess. While I am asking, what cut is good for sirloin steaks, The only steaks they processed for me was the fillet and tbones. I could t even find the ribeyes.
 
You need to realize you are going to lose as much as 30% weight when cooking...
8oz per person is cooked weight not raw...
I'd plan on 50 pounds MINIMUM of uncooked beef for 80 folks and probably 60 if I had it on hand...
That being said...I'm guessing that both briskets wont be enough so...Chuck roasts and shoulder roasts go very well with brisket
You can use all the exact same rubs and techniques...
Of course the folks here will offer all the advice we can to assist you with a successful cook but personally, I'd seek out some experienced help for the cook...
There is a definite learning curve for brisket and other largish hunks-o-beef.
I'd hate to hear you spent a great deal.of time and effort for your big day only to end up with something less than an exceptional meal.

Weddings are not an event to cut your teeth on smoking brisket etc... Especially for 80 people which has its own nuances. It's a special once-in-a-lifetime event that can't be redone. Strongly suggest you hire it done.

Do you all have recomendations for anyone in Indianapolis IN area who would do it, also what would that cost?
 
I agree with Holly and Schlotz that this isn't the best time to learn how to do a brisket. I would check your phone book or google for any area BBQ joints that cater events. Surely you'll come up with several. Enjoy your wedding day!
