Sorry to hear the problems getting your grinder set up for stuffing, but you hung in there and stuck with it. Good job despite the problems!
I have the #8 - .35 hp LEM grinder. I stuffed sausage with it one time and never tried again. The meat was too finely ground/emulsified at that point. I've got a 5# LEM stuffer.
