I went to CostCo and bought a double-slab package of ribs for my first pork smoke in my new Smoke Hollow. I still can't get the heat down below 275* so the 3-2-1 method got shortened but they still came out pretty good. I need to get one of those needle valves that reduce the propane flow. My wife is the model holding the finished product. She loved them so I guess I did good.

MikeSr,
I'm not familiar with your smoker, but by looking at those ribs - you did a fine job! Keep messing with it, you'll figure it out. I just spent two hours messing with one of my smokers that I "tuned up"... maybe.. ;o)

It's all good when you're Q'en.

Looks like a decent smoker.
Good news, you're in the right place - lots and lots of folks that will definitely be able to help you with the neceassary Mods or other suggestions.

Way to improvise and adjust to the cooking conditions.

first time and it looks like the wife likes them too. That a good smoker I have the Gosm that is very simalar and one thing is don't rely on the thermo meter on the door mine is about 30* low and that made for alot of dried out food.

The thermometer in the door is pretty close to a grill thermometer that I have laying on the second rack. We'll see how consistant they both stay.
