I bought an 8lb pork butt that was on sale at the local grocery store so I decided to do some pulled pork. Rubbed it down with a pretty simple rub, brown sugar paprika cayenne pepper salt garlic powder onion powder. Let it sit over night. Put on the smoker at 4:30am smoker temp was anywhere from 225-250 all day.
Here it is after four hours. IT was 167.

It crept very slowly from 167 all the way to 205. Here it is again after 7 hours.

After 12 hours in the smoker and me and the girlfriend getting hungry I turned up the heat to 265 when it hit 195. Once I did that it only took about 45 minutes to finish. Here it is fresh off the smoker.

And here it is throughout the pulling process. The meat was very juicy and delicious. Didn't get any pics on the bun I couldn't wait any longer. Gonna eat some more for lunch today.

Next up is a brisket.

Looks great. Nice Pics...JJ

I was extremely happy with the results and can't wait to do another one. With some variations this time to improve what I think could be better.
Good to hear.  That is the great thing about smoking and q'ing.  There is alway some new way to try doing things or the good ol tried and true to fall back on when you know exactly what you want.
