My First Cheese Smoke with AMNS

Today I tried cold smoking cheddar and pepperjack cheese. I must have had the grill sitting in the sun too long because the pepperjack melted. The cheddar was fine, but I threw the chunks into a platic baggie with a paper towel when I was done and then into the fridge. Is that going to be ok? I dont have a vacuum sealer. I need some advise!
 
You leave out a lot of details - how long did you smoke and at what temp did the box get up to 

You should take the cheese and suck as much air out of the bag as possible and let rest for 2-3 weeks at least and see how it turns out
